  1. Cream with a mixer ½ pound of butter, and gradually add 1 ½ cups sugar; blend in 2 squares melted chocolate and 2 teaspoons vanilla. Add 4 eggs, two at a time. Beat 5 minutes at medium speed after each addition of eggs. Pour into a baked pie shell, chill in refrigerator. Serve topped with whipped cream.

AWESOME! this recipe really works. I prefer it made with buttermilk. Yea, Yea, I don't drink it either.
  • ¾ cup buttermilk or water
  • 2 cups sugar
  • 2 cups Pecan halves
  • ⅛ teaspoon salt
  • 2 Tablespoons butter
  • 1 teaspoon baking soda
  1. Cooking time 13 minutes. Use 4-5 quart glass bowl. Stir together. Cook on high for 12 minutes. Stir in baking soda until foamy. Cook on high 1 – 2 minutes. This gives it a carmel color. Beat mixture until mixture is tacky (1/2 – 1 minute). Drop by teaspoons on buttered foil. Makes 5½ dozen.


Chocolate-Marbled Almond Cheesecake

  • 1(2-ounce) pkg blanched almonds, ½ cup finely chopped
  • 2-cup sugar
  • 4 (8 oz) pkg cream cheese, softened
  • 4 eggs
  • 1-cup sour cream
  • 1 tbsp unsweetened coca
  • 2 tsp vanilla
  • 1 tsp almond extract
  • 12 oz pkg semi-sweet chocolate chips, 2 cups melted
  1. Heat oven to 325. Lightly butter 9-inch spring form pan; press almonds firmly on bottom of pan. Set aside.
  2. Combine sugar and cream cheese in large mixer bowl. Beat at medium speed. Scrape bowl often, until creamy (3 to 4 minutes). Add eggs, one at a time. Beat well after each addition (1 to 2 minutes). Add all remaining ingredients except chocolate chips and almonds. Continue beating until well mixed (1 to 2 minutes). Gently stir in melted chocolate throughout batter for marble effect.
  3. Pour batter into prepared pan. Bake for 65 to 75 minutes or until just set 2 inches from the edge of pan.
  4. Turn off oven; leave cheesecake in oven for 2 hours. Loosen sides of cheesecake from the pan by running knife around inside of pan. Cover; refrigerate 8 hours or overnight.


Kitty's Crazy Banana Bread

Awesomely Good! Remember you want extremely ripe bananas.
  • 2 c white flour or 1¾ whole wheat flour
  • 2 tsp baking powder
  • ¼ baking soda
  • ½ salt
  • ⅓ c butter
  • ⅔ c honey
  • 1 tsp vanilla
  • 2 eggs
  • 1 c mashed bananas (3-4 whole bananas)
  1. Mix the flour, baking powder, baking soda & salt together and set aside for later. Cream the butter, honey and vanilla together well. Beat the eggs and mashed bananas together. Now alternately add the flour mixture to the creamed mixture. You may add pecans if desired. Place in a greased loaf pan. Bake at 350° for 1 hour. If making muffins bake for 25 minutes. Cool for 10 minutes when remove from oven before cutting and eating.


Margaret's Apple Strudel

  • 3 ¼ cups flour
  • 1-cup lukewarm water
  • 2 T butter
  • ¼ cup sugar
  • ¼ t. salt
  • 1 egg
  • 8 apples
  • lemon juice
  • sugar & cinnamon
  • chopped pecans
  • raisins
  • coconut
  • Maraschino cherries
  1. Place flour in large bowl. Add water, butter, sugar, salt & egg. Mix until all flour is blended in well. Place dough on floured board & knead until flexible. Divide into thirds. Place each in small greased bowl & cover with a damp cloth. Let rest in warm place.
  2. Core apples & slice ½ inch thick. Sprinkle with lemon juice. Roll out dough with pin as thin as possible & then stretch dough by placing hands under it & stretching towards you, starting in the middle. Butter the whole sheet of dough. Sprinkle apples, pecans, raisins, coconut, cherries, brown sugar & cinnamon. Roll up in jellyroll fashion. Butter roll before baking. Sprinkle with sugar & cinnamon mixture.
  3. Place on greased pan bakes 375° for 45 minutes.



Evelyn's Awesome Zucchini Bread

  • 2c whole wheat flour
  • 1c white flour
  • 1T salt
  • 1Tsoda
  • 3T cinnamon
  • 1T nutmeg
  • 1T baking powder
  • 2 c peeled & grated zucchini
  1. Beat 3 eggs until creamy. Add 1c oil, 2c sugar, 2T vanilla, 2c peeled & grated zucchini, ¼ c pecans. Mix all together & bake at 325°F for one hour. Makes two large loaves.
